COCONUT JAGGERY CAKE
The world over people have delicacies and ingredients
associated with the place. Here is an ingredient which is unique in GOA. Its taste,
texture and appearance vary from place to place. In Goa it holds pride of
place. This is none other than THE GOA
COCONUT JAGGERY!!!!, A must in every Goan delicacy.
INGREDIENT:
1/4 kg coconut jaggery1/4 kg white jaggery
1/4 kg sujji (*2 cup)
2 cup fresh grated coconut
1 teaspoon oil
Salt as per taste
1/2 teaspoon baking soda
50 gram cashew nut
50 gram almonds
50 gram kishmish
PROCEDURE
STEP 1:
Take ¼ kg of coconut jaggery and ¼ kg of normal white jaggery in a bowl and then add ½ cup of water in it.
STEP 2:
Heat that bowl until the jaggery is melted and wait till it become cool.

Now add 2 cup of sujji and 2 cup of fresh grated coconut in that melted mixture and mix it well until it become soft and spongy.

Add salt as per taste. Also add 1/2 teaspoon of baking soda so that the cake become soft and spongy. Now add some dry fruits (cashew nuts, almonds, kishmish....) as per your convienence.

Put the gas off. Now put the mixture into the tight container for more than 3 hours so that it become soft.

After 3 hours, take another bowl and spread some oil in it. Make sure that the oil should reach each and every corner of the bowl.

Now , put the mixture in that bowl and evenly spread it. Cook it either in oven or in cooker as per your convienence. Make sure that it should bake or cook for atleast 1 hour (i.e 60 minutes).

STEP 8:
After 60 minutes, take out the cake from cooker or oven and wait till it become cool. Once you remove the cake from the bowl, serve it in the plate and decorate with some dry fruits.
